Air Fryer Crispy Parmesan Cod Recipe
The air fryer has changed our cooking world. Not only has it allowed us to cook luscious meals with less fat, but the air fryer does a quick job of chicken, pork chops, steaks, and fish. Cod is a favorite type of fish that cooks quickly, and when made crispy in the air fryer with a Parmesan/ breadcrumb coating, it is delicious. Canned spaghetti sauce that has been slightly warmed is the sauce for the Cod. Air Fryer Crispy Parmesan Cod can be made in 30 minutes or less.

4 Servings

2 eggs
1 tablespoon vegetable oil

1/2 cup dry bread crumbs
1/4 cup freshly grated Parmesan cheese
1/4 teaspoon Italian seasoning

1 pound cod fillets, cut into four pieces

1/2 26 oz. jar spaghetti or marinara sauce

  1. Beat the eggs and vegetate oil (I use a bullet blender). Pour the mixture into a zip-type bag.
  2. Mix the bread crumbs, Parmesan cheese and Italian seasoning in another zip-type bag.
  3. Put the cod pieces in the egg mixture and squish it around so that the pieces are coated.
  4. Pour the cod and egg mixture into the bread crumb mixture.
  5. Shake or squish the cod pieces until they are completely coated.
  6. Spray the inside of the air fryer liberally with non-stick spray.
  7. Place the cod pieces in the air fryer. If there is leftover bread crumb mixture, press it onto the cod pieces in the air fryer.
  8. Cook the cod 8-10 minutes or until the coating is browned and crisp.
  9. Heat the spaghetti sauce and serve over the cod.
