Easy Blueberry Cobbler Recipe
Blueberries are one of those miracle foods that are filled with nutritional goodness. They are low in calories and high in Vitamins C and K. Blueberries have antioxidants and phytochemicals that may help to protect the body against cancers, aging, and some degenerative diseases.

With the advent of frozen blueberries, this fruit is easier than ever to use in recipes. I buy a large bag of frozen blueberries at my local Costco and use them in smoothies, muffins, and cobbler. This recipe is tasty and takes less than 10 minutes to make and about an hour to bake.


Easy Blueberry Cobbler

Ingredients:
4 cups frozen blueberries (I used Kirkland brand.)
Juice of half of a lemon
1/3 cup turbinado sugar or brown sugar
5-6 tablespoons butter (I used 6 tablespoons.)
1 1/4 cups baking mix (I used Bisquick.)
1/4 teaspoon nutmeg
1/2 cup white sugar
1/2 cup whole milk
1 teaspoon vanilla
1/3 cup mildly flavored beer (I used Michelob Ultra.)

Method:

12 hours before baking the cobbler, prepare the blueberries. Mix the frozen berries with the lemon juice and turbinado sugar. Refrigerate until the blueberries are thawed. There will be a lot of juice in the bowl. Save most of it for other purposes. I used mine for a yummy smoothie.

Before you start mixing the batter, remove the blueberries from the fridge. Preheat the oven to 325 degrees F.

Slice the butter into an 8 x 8 inch pan and place the pan into the preheating oven, until the butter melts. Remove the pan from the oven and set it aside, while you make the batter.

In a medium mixing bowl, add the baking mix, nutmeg, and sugar. Whisk the dry ingredients together until they are well mixed. Add the milk, vanilla, and beer. Whisk until the batter is smooth. Pour the batter over the butter in the pan.

Drain the blueberries and reserve the liquid. Spread the blueberries evenly over the batter all of the way to the edges. Spread 2 tablespoons of the blueberry juice over the blueberries.

Bake at 325 degrees F. for 50 minutes. Then, leaving the cobbler in the oven, raise the temperature to 350 degrees F. Continue baking for 15 more minutes, or until the cobbler is golden brown and the batter has pulled away from the sides.


Serve the Easy Blueberry Cobbler warm from the oven. You can dress it up with a scoop of vanilla ice cream or a dollop of whipped cream. This makes 8 small servings or 6 generous servings. Easy and delicious! What could be a better dessert to go with a sandwich meal?
