Mardi Gras Slaw Recipe
New Orleans has a huge Mardi Gras celebration every year. Visitors from all over the world attend the festivities. Much of the celebration centers around the incredible traditional Cajun foods that are served. Even though all of us can't go to New Orleans every year, we can still prepare good Cajun food to bring a bit of Mardi Gras to our homes. The colors of Mardi Gras are Green for Faith, Purple for Justice, and Gold for Power. The desserts are often sprinkled with gold, purple, and green sanding sugar. This Mardi Gras Slaw contains gold bell peppers, green bell and jalapeño peppers, and purple cabbage to bring out the theme colors of Mardi Gras. It's quick and easy since it starts with a bag of finely shredded cabbage (no orange carrots to ruin the theme). You'll want to serve this slaw year round because it's so good.

This coleslaw is perfect on its own, and it is especially good with Cajun Pulled Pork Sliders If you're entertaining on Mardi Gras this year, you'll want to include this delicious coleslaw on your buffet.

8 Servings

1 10 oz. package angel hair coleslaw mix (no carrots or cabbage)
1 large yellow bell pepper, cored and diced
2 jalapeno peppers, cored and chopped
1 green bell pepper, cored and chopped
2 cups red cabbage, finely shredded

Dressing:
1/2 cup mayonnaise
1/3 cup sugar
1/3 cup milk
2 tablespoons white wine vinegar
1/4 teaspoon Tabasco pepper sauce
1/4 teaspoon dry mustard
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
1 teaspoon dehydrated onion flakes

  1. Mix the coleslaw mix, peppers, and cabbage in a serving bowl; toss with the dressing.
  2. If you have time, refrigerate an hour before serving.
  3. Dressing: Mix the dressing ingredients in the blender until smooth.
